More over sourdough, the trendiest new bread for your avocado on toast is rye – and it’s already gained a host of celebrity fans.

Sales of rye products have been soaring this year with a growth of 9 per cent compared to a decline of 1 per cent last year.

That’s thanks in part to the so-called super grain’s health benefits, which have led celebrities such as Made in Chelsea’s Millie Mackintosh, TV chef Nigella Lawson and presenter Davina McCall to jump on the rye bandwagon.

Nigella’s latest book Simply Nigella features a recipe for rye ginger cookies, while Instagram fitness star Joe Wicks includes a smashed avocado with bacon on Ryvita crispbread dish in his book Lean In 15: The Shape Plan.  

And fitness fanatic Millie often likes to tuck into a piece of rye toast with poached egg and avocado for breakfast, showing it off on her Instagram.

Meanwhile, fitness queen Davina swears by rye bread and rye crackers as part of a slimming diet, and has shared recipes in the past for sweet French rye toast and rye crackers with toast as part of her five-week bikini diet.

So why exactly are so many celebrities opting for rye?

Rich in whole grain and fibre, rye is great for your gut and can help with digestion.

WHAT IS RYE?

Rye grain is used for flour, which is then turned into bread and crispbreads, rye beer, some whiskies and some vodkas.

It’s very low in gluten, which means it’s less likely to make you bloat than more traditional breads.

Latest figures show Poland is the world’s biggest exporter of rye, followed by Germany, according to The Atlas of Economic Complexity. 

The grain is also packed full of nutrients such as magnesium, iron, and zinc, which keeps bones, skin, hair and nails healthy.

Supermarkets are also jumping on the bandwagon as loaves are now widely available across UK stores.

Nutritionist Rob Hobson, co-author of the Detox Kitchen Bible Cookbook, said: ‘Rye is a delicious wheat-free grain and one of my favourite varieties of bread as it’s incredibly wholesome and can be loaded with an endless choice of healthy toppings, such as avocado and smoked salmon.

‘This grain is also high in fibre and a great source of essential nutrients including iron, magnesium, zinc and B vitamins, all of which are essential to maintaining good health.’ 

FEMAIL can share this unusual recipe by food scientist Dr Rachel Edwards-Stewart, whose PHD was sponsored by Michelin-starred chef Heston Blumenthal, for papaya and cheese on a Ryvita crispbread.

RECIPE: GOLDEN PAPAYA CINNAMON CRUNCH (SERVES ONE)

INGREDIENTS:

1 Ryvita apple and cinnamon crispbread

3 slices of cheddar cheese 

3 slices of papaya

1 stalk of thyme

Juice of half an orange

A generous sprinkling of turmeric

METHOD:

Slice your cheddar cheese and papaya and layer onto the crispbread (cheese first). 

Grill until the cheese has melted and the papaya turns a little golden.

Remove from the grill and drizzle on the orange juice. 

Sprinkle on the leaves from your thyme stalk and the turmeric.
