Because growers tend to breed only the seedlings that have the best reddish color, unlike other fruits, color actually isn’t a good indicator of how ripe a peach is. “Pick the peach up, turn it over and look down into the hole around the stem,” says McGehee. “If it’s lime green it will take a day and a half to two days to ripen on the counter. If it’s more of a sherbet yellow, it’s ready to eat.”
