Here Is The Expert Opinion On The Differences Between Chocolate Types

Our love for chocolate is not in doubt, but how much do we actually know about the sweet stuff? We had two experts from Voila Chocolat come by to give us an education. Watch founder Peter Moustakerski and master chocolatier Christophe Toury talk to us about where chocolate is sourced, the many varieties, and how it may actually be healthy for us!

Three main chocolate types
Peter describes to us the process of making chocolate, and how we can end up with so many different varieties, all coming from the “same place” – the cacao bean.

  • Dark Chocolate – Cacao, roasted and ground into a paste, and sugar
  • Milk Chocolate – Cacao, roasted and ground into a paste, mixed with sugar and milk powder
  • White Chocolate – Cacao, roasted and ground, produces a transparent oil as a byproduct. White chocolate is made from this oil, which still has the properties of chocolate, and tastes like chocolate, but doesn’t have most of the flavor, or any of the good nutritional aspects of chocolate (It is great for chocolate artisans and mold-making though!).
