Forget tumeric lattes, beetroot lattes, and rainbow lattes: the newest coffee trend is blue ‘smurf’ lattes.
The blue smurf latte is currently gracing the menu at Matcha Mylkbar in Melbourne, a vegan matcha cafe in St Kilda.
Unlike some of the other coloured coffees that have become so popular on Instagram, the blue latte isn’t a result of food colouring, but instead due to E3 live blue algae.

Would you drink this? The lattes are made with E3 live blue algae, as well as lemon, ginger agave and coconut ‘mylk’
The blue algae is a ‘superfood’ that purposes to ‘help support overall body/mind balance in numerous ways’.
‘Its field of action simultaneously includes the immune, endocrine, nervous, gastro-intestinal and cardio-vascular systems,’ producer of the product E3 claims.
Matcha Mylkbar serves the algae with lemon, ginger agave and coconut ‘mylk’ to make the latte, which appears to be served with a sprinkling of red powder on top.

Although the concoction has only been available since Saturday, it looks like it will be popular, with the photo of the latte gaining more than 3,000 likes on Instagram.
The cafe knows all about social media trends and interestingly coloured drinks, with an orange tumeric latte and a pink Beetroot latte on their menu.
‘Ticking off the rainbow, slowly…’ the cafe wrote on its latest Instagram post.

Earlier in the year rainbow lattes also became a hit online, after Las Vegas barista Mason Salisbury invented the concept.
Soon they came to Australia’s coffee capital Melbourne, where cafe Too Many Chiefs started making the lattes with food dye.
What will be the next hipster coffee trend? Only time will tell.
