Huevos Rancheros
“I never skip breakfast and love making a big brunch. On weekends, I love eggs over easy with gluten-free toast, since I’m celiac, and tons of veggies in some kind of a salad, with black coffee. I also love making my healthy spin on huevos rancheros, using greek yogurt instead of sour cream, corn tortillas and a spicy homemade salsa that’s lower sodium than the store-bought stuff, and way more tasty.
On weekdays, I’m more rushed. These days, it’s 2 percent Greek yogurt with a tablespoon of chia seeds and whatever frozen berries I have on hand, along with a green juice a few days a week and, always, coffee — black.â€
